Mindful makes healthy choices second nature. Each Mindful offering is developed by chefs to be delicious and filling, while also meeting our strict nutrition criteria based on the latest science and guidelines.  Look for Mindful options in Bruff Commons, Le Gourmet, Drawing Board Café, and Bruff to Go. 

Bruff Commons is Mindful Gold Certified! Mindful Gold Certification indicates that Bruff meets over 40 criteria that aim to create a healthy dining environment, including offering a variety of whole and cut fruit, using lower-fat products, and featuring a Mindful dish at each station.

Vegetarians,or individuals who do not eat meat, poultry, or fish, can find a variety of options daily in Bruff Commons, LBC Food Court, and other locations around campus. 

Bruff Commons features a made-to-order vegetarian station, plant-based protein options like quinoa legumes and tofu at the salad bar, black bean tacos, vegetarian stir-fry, and garden burgers upon request at the grill every day. Just look for the vegetarian logo to determine what fits into a vegetarian diet. 

LBC Food Court, Le Gourmet, Drawing Board Café, and Bruff to Go and other locations also feature many vegetarian options. From the tofu tacos at Al Fuego to the build-your-own sandwiches at Le Gourmet, vegetarians can find great options around campus by looking for the vegetarian logo. 


Examples include:

-Tofu or black bean tacos, burritos, and quesadillas at Al Fuego

- Quinoa, tofu, or legume topped salad at Wall of Greens

-Tofu and Veggie Pho and Lemongrass Tofu at Star Ginger

-New York style vegetarian sandwiches at Pickles like the Green Central Station and Statue of Liberty

-Vegetarian salads, wraps and bowls at Freshens

-California veggie burger at WOW Café and Wingery

-Vegetarian Chef's Specials at Zatarains

-Vegetarian sushi rolls at AFC Sushi

-Variety of seasonal vegetarian options at Panera Bread including soups, sandwiches, and salads

-Made to order sandwiches and stir fry at Le Gourmet 

Vegans,or individuals who do not eat meat, poultry, fish or animal by-products, can find vegan options in Bruff, including:

-Tofu, legumes, and other high-protein grains at the salad bar

-Weekly vegan options at the Simple Servings station

-Made-to-order vegetarian options that can be made vegan 

Vegan options can also be found at Star Ginger, and Wall of Greens.  

Additional vegan options are indicated with the vegan logo.
